Armoracia rusticana, commonly known as horseradish, is a perennial plant renowned for its long, white, pungent root. It grows upright with a clumping habit, reaching heights of about 1.2 meters (4 feet). Horseradish thrives in many soils, but particularly moist well-drained, fertile soils with full sun or part shade and prefers cool to temperate climates. It spreads easily, but harvesting the roots every year and replacing some to regrow will keep unwanted spreading in check.
Horseradish has been valued medicinally for its antibacterial and anti-inflammatory properties, traditionally used to treat respiratory conditions like sinus congestion and bronchitis, stimulate digestion, and boost the immune system. It is also widely used as a culinary herb.
